Ingredients
  • 1cup Dulserinsed and cut into small pieces
  • 2cups alfalfa sprouts
  • 1/2cup red and yellow pepperssliced
  • 1/2cup scallions or red onionsliced
  • 1stalk celerysliced
  • 1 avocadoscooped with a melon ball tool
  • 1 tomatocut into small wedges
Dressing
  • juice of one lemon
  • 1tbsp tahini
  • 1 small clove garlicgrated
  • dash of salt
Instructions
  1. In a small bowl, combine lemon juice, tahini, garlic, and salt. Beat well with a whisk or fork. Toss the vegetables with the dressing in a large bowl. Taste for seasoning.
  2. Serve on lettuce as a side salad or in a pita with lettuce for a light lunch.
